I met Erin at a wedding expo and I had been searching for the best tasting cake but with the best value. I had been to 2 other tastings previously and was not impressed with the cakes when compared to the dollar amount. Erin blew the competition out of the water. Not only did she have a ton of cake/icing/filing flavors (that were all deliscious)she had the best value. When I saw my cake for the first time I was speechless at how pretty it was (I didn’t want to cut in to it) and then I tasted it, it was like heaven. She had created a pineapple compote just for us as our theme was very tropical. My guests thoroughly enjoyed it and even took slices home with them. The cake was such a hit that all that was left of the cake was two slices (which me and my husband snagged to take home)

Thank you so much for the delicious croquembouche you made for our wedding! We will remember how amazing it was for the rest of our lives. We were able to get something unique, beautiful, and tasty all because of you! The chocolate cream was to die for! Our guests are still talk to us about how “great those little balls” were – some even said they were fighting off other guests so they could get more of them. Slicing the big croquembouche with the sword was one of my most fun memories of the whole day.

Working with you was nothing but an utter pleasure. You were a consumate professional while still being kind and warm. I really appreciated how willing you were to step out of the cake box and make us something really unique (at least in America).

Hello Erin,

On our one year anniversary yesterday we enjoyed the sweetly saved extra layer of our cake that you baked for us. I wanted to take the time to thank you again for making our wedding cake extraordinary! Not only was it delicious, but it was so exceptionally beautiful. You even managed to match the lace detailing on the cake to my dress, and you never even saw it! With a short meeting and simple explantation you managed to make a large piece of our wedding day unforgettable. Thank you so much! I would be honored to serve as a testimony to any future clients! Amazing cake!

Rassasy Cakes (Erin) did an amazing job on our wedding cake! She worked with my vision and made some great suggestions in order to make my vision possible. Our wedding cake was exactly how I had imagined it to look. She came to our home and did taste testing of different cakes and frosting (my husbands favorite part of planning our wedding). She worked within my budget and I never felt like I was having to skimp on anything! The cake was so tasty and moist! Even a year later our cake top was delectable! Erin delivered our cake to the wedding site and even decorated our cake with fresh flowers from our florist. I never had to worry about if the cake was going to be delivered on time and set up with care. Erin is a true artist with a vision and passion for creating beautiful cakes. I want to thank you so much for your amazing job on my wedding cake. It was beautiful and from what all our guests said it was amazingly good (my husband and I only got to taste the piece we fed eachother for pictures lol) we are soooo bummed we didn’t get to try it but all of our guests couldn’t stop raving about it. With all the stresses involved in planning a wedding, working with Erin at Rassasy Cakes was a breath of fresh delicious air! We had very different design ideas for our cake but Erin was able to take concepts from both of them, including Jason’s bizarre request for “chippy” filling, and created a beautiful piece of art that we loved. The detail she put into her work was incredible. And it tasted just as amazing as it looked; so light, moist, delectable and even the chocolate chip bits were a fun twist. We highly recommend Erin to everyone we know and will defiantly be coming back to her for all our future cake and dessert needs!

Erin created my wedding cake and a groom’s cake for me. Both were absolutely amazing! I was impressed with her artistic ability matching what we wanted for our fall wedding. Her groom’s cake was fabulous! My husband is a huge fan of the Delorean car. She masterfully created a cake that looked exactly like the Delorean from Back to the Future (the movie)! It was amazing and my husband was in awe. I recommend Rassasy cakes for wedding cakes or any other special occasion! You will be impressed!
